This Certified Heirloom cacao comes from Kampura Farm, an 800-hectare organic agroforestry estate in Guatemala that was transformed from former cattle pasture into a thriving cacao and forest ecosystem. Established in 2011, the farm is home to approximately 160,000 grafted cacao trees representing more than 50 cultivars, grown beneath a canopy of mahogany, rosewood, and madre-de-cacao shade trees. Certified organic and recognized through Guatemala's Forest Incentive Program, Kampura combines biodiversity, sustainable forestry, and heirloom genetics to preserve some of the world's most distinctive cacao varieties. The farm's rugged landscape of rolling hills, ravines, and forested roads creates ideal growing conditions that contribute to the complexity of the cacao.
The flavor profile is remarkably layered and expressive, showcasing the diversity of its heirloom genetics. Notes of ripe banana, apricot, and almond biscotti lead the tasting experience, supported by hints of molasses, toffee, honey, and dried fruit. Bright tropical and citrus-like fruit acidity adds lift and freshness, while subtle undertones of roasted nuts, fresh grass, and spice create depth. The finish is smooth, balanced, and lingering, revealing honeyed sweetness and gentle chocolate richness that allows the cacao's unique terroir to shine.
